The two things that are better embodied than Natore are Banalata Sen and Kachagolla by Jibanananda Das which have withstood the test of time due to their delicious taste. The funny thing about Kachagolla is that, unlike Rasgolla, it is not round in shape or has no shape at all. It is soaked in savanna (cheese curd made from milk) syrup or sugar syrup which then evaporates, this is a simple and significant process.
The story behind the discovery of this sweet dairy product dates back to two and a half centuries ago when Natore was once ruled by a powerful landowner. According to legend, Rani Bhabani, also known as the 'Queen of Natore', ruled over half of the province of Bengal. He was very interested in eating sweets and so a sweet maker named Madhusudan Das from the nearby Lalbazar area provided him, with sweets.
One day, about 20 of Modusudan's employees fell ill and about 60 kg of Chinna was about to go bad while sitting in his shop intended for the queen. In an attempt to save Chhena from getting worse, he poured some veins and kept stirring. As the syrup soon evaporated, he tasted it and was surprised to discover that his creation was quite tasty.
Rani Bhabani was deeply impressed by the taste and complimented Madhusudan and asked him what he had been asked. Madhusudan was then named Kachagolla because it was made from raw chana (unrefined cheese curd).
Rani Bhabani then started greeting all her guests with Kachagolla and started sending it to the royal family all over the Indian subcontinent and even in Britain.
Nowadays, Kacha Golla is admired by all at home and abroad and the popular recipe is adopted by many.
